This week for our family dinners the Nutrition Ninjas made red lentil dahl and homemade garlic naan bread. Children were able to develop their fine motor skills whilst the activity also provided the opportunity for older students to develop their leadership skills in assisting the younger students with different tasks. Red Lentil Dahl
1 tablespoon rice bran oil
1 diced brown onion
2 garlic cloves
1 tablespoon mild curry powder
2 cups dried red lentils
1 teaspoon ginger
1/2 cup coconut milk
3 1/2 cups chicken liquid stock
Heat oil in a saucepan over a medium heat. Cook onion for 8 to 10 minutes or until tender. Add garlic and curry powder. Cook for 2 minutes or until fragrant.
Add lentils, ginger, coconut milk and stock. Bring to the boil on the stove and cook in the slow cooker on high for 3-4 hours. Add more stock if needed.
